Pizzadough

First lets make the start dough:

Mix 25g fresh yeast in a small bowl and add 1dl water 35°C.

Add 100g of white flour, mix and let it rise for 1h.

 

Next, pour 400g of white flour in a large bowl, add 10g salt and 2,5dl water. Add the start dough to the mix and work it slow in a kitchen machine for 3-4min, let it rest for 10 min.

Now work the dough hard for a couple of minutes before turning down the speed again to add a teaspoon oliveoil.

 

Put the dough on a floured worksurface and cut the dough up in 4 pieces, let it rest for 1,5h in 20°

 

Tomatosauce

1 box of good quality crusched tomatoes

2 cloves garlic (use garlic press)

1 spoon olive oil

a dash of white wine

salt

pepper

 

Cheese mix

I found the best mix of cheeses to be:

fresh buffalo mozarella

cheddar

parmesan.

 

Make and bake

Preheat the oven to 275° and then turn it to underheat.

Use your hands and work the dough out into a circle.

It should be as thin as possible, almost seethrough.

Add tomatosauce, cheese and toppings.

Bake it low in the oven 5-10 min or til the cheese has melted and the pizza has some color on the crust.

cheddar

a dash of white wine
